Ingredients
- 1 package Phil’s Finest Korean-Style BBQ Beet Ground Beef
- 2 cups white rice, short grain
- 3 cups water
- ½ cup kewpie mayo
- 1 tbsp sriracha
- 1 tbsp soy sauce
- 1 bundle carrots, obliqued
- 1 bundle scallions, thinly sliced.
Method
- Add rice to a fine mesh strainer and rinse under cold water for 30 seconds. Shake over the sink to remove excess water and add to the rice cooker. Add water and begin the cooking cycle.
- Portion ground beef mix into (approx.) 1 oz pieces and roll into balls. Set aside on a plate as they’re completed. While you’re doing this, heat your wok or skillet over high heat.
- When wok or skillet is hot, add oil and heat until just smoking. Add meatballs and move pan continuously to keep them from sticking. Let caramelize, stirring occasionally, until cooked through. Remove, set aside.
- In the same oil, add your carrots and roast until done. While carrots are cooking, add kewpie mayo, sriracha, soy sauce and stir to incorporate.
- In a bowl, add steamed rice, meatballs, and roasted vegetables. Drizzle liberally with spicy mayo and a handful of scallions. Best enjoyed with friends!
